Going out to eat is often a treat, but nothing beats a home-cooked meal. Here’s a bunch of recipes given to us by students and staff of Roosevelt Intermediate School.
Recipe 1: A delicious Blueberry Lemon Pound Cake given to us by 8th grader Leona Rogers. The recipe was created by Leona’s great aunt, Margie Berk.
2 cups sugar
1/2 cup butter (1 stick)
8 oz. cream cheese
4 eggs
3 cups flour (divided)
2 cups blueberries
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
8 oz. lemon yogurt
1 tsp. vanilla extract
Instructions:
- Preheat oven to 350 degrees
- Beat softened butter, softened cream cheese, and sugar till well blended
- Add eggs one at a time, beating after each addition
- Combine 2 Tbs. of the flour and blueberries
- Toss gently and set aside. Combine the remaining flour, baking powder, baking soda, and salt.
- Add flour mixture alternately with lemon yogurt, beating as little as possible.
- Fold in blueberries and vanilla.
- Spray a bundt pan with cooking spray and bake at 350 for 1 hour or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before removing.
For the glaze:
- Combine 1/2 cup powdered (confectioners) sugar and the juice of 1 lemon
- Mix well with a fork or whisk
- Brush over warm cake with a pastry brush

If you love a light, airy cake with a hint of tangy blueberries and lemons, then this is the cake for you!
Recipe 2: Ziti, this awesome, delicious pasta recipe is from 8th grader Harper and Emmy Bryne’s mom.
1 pound ziti
1 egg
2 16-oz sleeves sliced fresh mozzarella cheese
1 jar of marinara sauce
Instructions:
- Combine the egg and ricotta cheese mix in a bowl until mixed thoroughly
- Boil pasta for 8 to 9 minutes, drain the pasta, and use a large aluminum pasta tray
- Layer tray with marinara sauce
- Next layer the ziti
- After layering the ziti, layer ricotta mixed with egg (spread evenly)
- Next layer of mozzarella
- Repeat layers one more time
- Bake covered with aluminum foil for 50 minutes
- Uncover
- Bake uncovered for 10-12 minutes
- Remove from the oven
- Enjoy!

The pasta that is worth the mess of sauce on your face! If you want the ordinary dinner pasta to be out of the ordinary, definitely try this ziti recipe.
Recipe 3: Teacher and Chef! Sra. Cassu can do it all, and she’s incredible; that’s why you need to make these awesome hot ham and Swiss cheese rolls.
2 sticks of butter, softened
3 tablespoons poppy seeds
1 tablespoon Worcestershire
3 tablespoons dijon mustard
1 medium onion, grated
2 packages Pepperidge Farm party rolls
1/2 pound grated Swiss cheese
1/2 pound sliced ham
Instructions:
- Mix the first 5 ingredients
- Slice rolls lengthwise (like a layer cake)
- Spread both sides with the mixture
- Put ham on the bottom half and sprinkle with the cheese
- Wrap in foil
- Bake at 400 degrees for 15 minutes
- Let cool slightly before slicing into individual rolls

These hot ham and Swiss cheese rolls are perfect for snacking alone or for a large party!
Recipe 4: Ooey, gooey, fudge brownies! A classic recipe from Daniela and Gaby Perez.
5 tablespoons of butter
1 ¼ cup of sugar
2 eggs
1 egg yolk
1 tablespoon of vanilla
⅓ cup of vegetable oil
¾ cups of cocoa powder
½ cup of flour
⅛ tablespoons of baking soda
1 tablespoon of cornstarch
¼ tablespoon of salt
¾ cups of chocolate chips
Instructions:
- Mix the dry ingredients
- Melt the butter
- Mix the wet ingredients
- Mix them all
- Put it in the oven for 20-25 minutes at 350 degrees

If you are craving the classic delicacy of a fudge brownie, then this is the recipe to make!
Recipe 5: A recipe that serves up a delicious quiche recommended by Louis Saint Denis’s mom.
For the crust:
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup cold unsalted butter, cubed
3 to 4 tablespoons of ice water
For the Filling:
6 strips thick-cut bacon, diced
1 cup shredded Gruyere or Swiss cheese
1/4 cup finely minced shallots or green onions
4 large eggs
1 1/4 cups heavy cream or half-and-half
1/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon ground nutmeg
Instructions:
- Prepare the crust: In a large bowl, whisk the flour and salt. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together.
- Chill and roll: Form the dough into a disk, wrap it in plastic, and refrigerate for at least 1 hour. On a floured surface, roll the dough into a 12-inch circle. Place it into a 9-inch pie plate or tart pan, trim the edges, and prick the bottom with a fork. Freeze the crust for 15 minutes.
- Blind bake: Preheat your oven to 375 degrees F. Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and paper and bake for another 5 minutes until the bottom is dry. Set aside to cool slightly.
- Cook the bacon: While the crust bakes, cook the diced bacon in a skillet over medium heat until crisp. Drain the fat on paper towels.
- Assemble: Scatter the cooked bacon, shredded cheese, and minced shallots evenly over the bottom of the pre-baked crust.
- Mix the custard: In a medium bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined and slightly frothy.
- Final bake: Place the pie plate on a baking sheet to catch any spills. Pour the egg mixture over the fillings in the crust. Carefully transfer to the oven and bake for 35 to 40 minutes, or until the edges are set but the center still has a slight jiggle.
- Cool and serve: Let the quiche rest for at least 15 to 20 minutes before slicing. This allows the custard to fully set. Serve warm or at room temperature.

This is a very easy meal to make for breakfast, lunch, and even dinner! This also tastes great in the cold! With it still being winter, it’s a perfect time to try this awesome French delight!
